Abstract: | 我國近年來高科技產業蓬勃發展,在政府之政策推動下,預估至公元2010年,台灣將會取代亞洲鄰近的韓國,而成為全世界第三大半導體產值之國,僅次於美國與日本。無論是半導體產業或是其他相關的高科技產業族群,大部份廠房都有附屬員工專屬的餐廳或類似的餐飲設施。但對於眾多的製造廠牌及各式各樣相關設備的管理經驗,仍分屬於各家公司的管理師或相關設備製造廠商的個人經驗知識,使得許多廚務經驗與相關知識無法有效的整合傳承下來,另一方面,廚務設備種類多、精密度也良莠不齊、加上各廠區全天候的(24 hrs)使用率等因素,亦增加了故障維修上的複雜度。故建立廚務設備的建置及保養維護等工作,其主要目的除了供應給員工各式各樣餐點之外在,更重要的一項任務,既是提升高科技產業廠房整體性的風險管理,以達成產業零災害事故發生的最終目標。 The semiconductor industry in Taiwan has developed rapidly under the government policy. Taiwan may outpace Korea to become the third largest semiconductor-manufacturing country after the United States and Japan in 2010. Most factories have subsidiary restaurants for employees or similar restaurant installations both in the semiconductor and other related high-tech industries. However, most manufacturing and management experience heavily depend on the personal knowledge of administrators or manufacturers of each company. Therefore, it is difficult to integrate and to pass on relevant skills effectively. Meanwhile, the difficulty to repair the breakdown is due to various factors such as, the diverse types of kitchen appliances, difficult quality control of equipments and high frequency of usage day and night. Thus, the main purpose of the installation of kitchen facilities and maintenance is not only aimed at providing its employees various choices of meals but also targeted on promoting the integrity of risk management which achieves to the final goal as zero accident in high-tech industries. |
