烹調熱炒所生成油煙,含有致突變化合物DNP,廚房排油煙機,可降低煮食環境之致突變物危害;本論文在找出排油煙機符合人因工程(人性因素工程學,Human Factors Engineering, or Ergonomics)人體身高的最佳有效排油煙高度,由各種品牌的比較實驗,改變排油煙機高度與風速條件,模擬油煙逃竄實驗的結果,進一步提出可有效提高廚房通風效果的移動式排油煙機與爐台。
實驗將分成三部分,第一部分量測不同的排油煙機之轉速、噪音量以及不同高度之風速,第二部分則是挑選出較具代表性之排油煙機,進行軸向、徑向以及配合煙霧製造機所模擬出的油煙逃竄之量測與分析,第三部分則將人因工程如作業姿勢、操作高度等加以考慮,期找出可接受配合之高度與固定方式。
實驗結果發現當排油煙機與爐台之距離縮短為40cm時,將可有效的將煙霧收集排出,超過此距離時則有油煙逃竄的情況發生,另以使用者之人因工程為考量後發現,使用者在排油煙機與爐台之距離控制在42cm處時,為最佳的操作距離。傳統固定式之排油煙機已無法有效滿足不同使用者之需求,唯有透過可調式排油煙機方可有效的將對人體有害之物質排出。 Abstract Smoke generated from cooking and stir-frying contains mutagenic compound DNP (1,6-dinitropyrene), and a range hood may restrain the exposure to mutating material in culinary environments. This essay is to investigate into the optimum, effective stature of the range hood in favor of ergonomics, and to modify the stature and velocity of the range hood from the comparison experiment between various brands; and then, in reference of the results of imitative escaping smoke experiment, a mobile range hood and mantel will be presented to enhance the ventilation of the kitchen effectively. The experiment consists of three parts. The first one is to assess the rotation rate, noise volume of different range hoods, and the velocity of individual stature; the second part is to select representative range hood for the assessment and analysis of axial or radial, imitative escaping smoke produced from smoke machine; and the third part is to define an acceptable stature and fixation, in consideration of ergonomics like operation posture, implementation height, etc. From the experimental results, we find that smoke will be collected and exhausted effectively if the space between the range hood and mantel is reduced to 40cm, and will be escaping out if such space exceeds 40cm. It is also found that the optimal implementation space for users is 42cm, in considering the ergonomics of the users. Traditional immobile range hoods can’t any longer meet the needs of distinct users. Using the mobile range hood is the only way to effectively drive out toxic substance hazardous to our health. |
