In the thesis, capillary electrophoresis (CE) was used for food and drug analyses.Capillary electrophoresis methods and micellar electrokinetic chromatography (MEKC)methods were developed successfully for analyzing the ingredients of the foods and drugs. A MEKC method with diode-array detection was developed to separate five important retinoids. Retinoids in pharmaceutical products can be determined by combiningthe MEKC and a direct extraction method. A caillary electrophoresis method with multiwavelength deection was developed to analyze the preservatives. The preservativeswere separated within 9 min using pH 10.0 buffer modified with 2 mM alpha-cyclodextrin.The preservatives in three different foods were determined by the CE method. A CE method with diode-array detection was developed to analyze synthetic food colorants. The eight food colorants were separated within 10 min by the CE method. The colorants in different foods can be determined by the CE method without any extraction or filtration. A CE method was developed to analyze eleven phenolicacids. The phenolic acids could be separated within 13 min. The phenolic acids in fruits juices were identified and determined by the CE method. A capillary electrophoresis/continuous flow fast atom bombardment mass spectrometry (CE/CF-FABMS) system and capillary electrophoresis/Raman spectroscopy (CE/Raman) system were established in the thesis
